Breads


1 c. water                                                                    1 tsp sugar
2 Tbs oil                                                                      1 tbs yeast
1 tsp salt                                                                      2 cups flour
Mix really well til dough is smooth. Make into golf ball size, roll out fairly thin, and fry in hot oil.  Approx. 12 pieces of fry bread.

 

 

Blender Style

1-1/2 cups wheat kernels                                                         1-1/2 cup milk
(Blend these together for 2-3 minutes)

add 3/4 cup milk and blend 1 more minute

add:
3 eggs                                                                                      1/2 c. oil
1 tsp salt                                                                                  1-1/2 TABLESPOON honey
1-1/2 Tbs. bk. pwd.

Blender together then cook in waffle iron, or can be used for pancakes! DELICIOUS!!



6 1/2 cups warm water                                                1 cube margarine (or 1/2 c. oil)
1 cup brown sugar                                                       2 Tbs. salt
2 Tbs. Instant Yeast                                                    2 cups oats
6 cups wheat (or white) flour

Mix in Bosch for about 7 minutes (This step is THE most important! You want a really smooth runny mixture at this point.)

Then gradually add in about 7 more cups of flour. (It will be enough to "clean the sides of the bowl" so there isn't dough sticking to the sides. If it still sticks, add a little more flour. Then let it mix for 10 minutes.

Pour about 1/2 cup oil on your counter top and rub around so the dough doesn't stick to the counter. Pour dough out onto counter, and cut into 6 equal portions. Form into loaves and place in greased cooking pan. (If you don't know how to form each piece into a loaf, just put it in the pan and smash it in til it gooshes into the corners and is kinda flat all the way around. This gets the air bubbles out, like forming into loaves and slamming it on the counter does! ^_^ )

Put in a warm area (on top of the stove, if it's warm, works well; in a car sitting in the sun, if you're CAREFUL! etc.) and let raise for approx. 30 minutes. It will take longer if it's in a cool area.

Once the loaves are raised about double, place in a pre-heated oven at 350 degrees. Bake for 30 minutes. Take out, dump out of pan and place upright. You can rub a little butter on the top and it looks really pretty! Let cool a bit and then ENJOY!!



Version 1  We love Marie Callendar's cornbread...this is the next best thing!

1 c. cornmeal                                       2 c. flour
1 c. sugar                                             1 tsp. salt
5 Tbs. baking powder
(then add 1/2 package yellow cake mix AND half of the other ingredients., i.e., water, oil, eggs [I round up on eggs]...)

then add the following (yes, these are in addition to the cake mix stuff):
2 eggs                                                  1 1/2 c milk
1/2 c. oil

Mix together then pour into greased 9x13 dish. Bake at 375 for 30 minutes or until toothpick comes out clean.


 

Version 2  We love Marie Callendar's cornbread...this is the next best thing!

c. cornmeal                                       2 c. flour
1 c. sugar                                             1/2 tsp. salt
1Tbs. baking powder                          4 eggs, separated yolks

1 c milk                                               1 tsp vanilla
3/ 4 c melted butter

Comebine cornmeal, flour, baking powder, and salt.  Add butter sugar and egg yolks.  Beat whites until stiff and add to mixture, then add vanilla and milk.  Mix lightly & bake at 350 for 30 min.



Brandon's & Dallin's Biscuits
8 cups flour                 1/4 cup baking powder                                   2 tsp salt

Mix above ingredients together, then "cut" (use a pastry cutter, or two knives slicing back and forth...a LOT!) in... 2 cups of margarine (butter-flavored shortening can be substituted, but we prefer the margarine....haven't tried butter...).  Mix until REALLY fine and crumbly.


Pour in 3 cups milk and mix into flour mixture. The dough will be VERY stiff and may need to be mixed with hands after milk is somewhat mixed in.

Roll out on floured counter top to about 1/2" thickness. Cut out rounds (biscuit cutter, or a drinking glass works well.)  Place very close together on a greased cookie sheet.

Bake at 450 degrees approximately 12-14 minutes...until golden brown. Serve with honey, fresh strawberry jam, or topped with gravy! YUM!!!



Hard Rolls (actually soft & EASY!)
4 cups warm water                                                      4 Tbs. margarine
3 Tbs. sugar                                                                 3 tsp salt

2 Tbs Instant Yeast                                                     9 cups flour (approx.)

Combine all ingredients and mix for about 10 minutes. Let raise once, then punch down and break into large golf ball-sized pieces. Knead each into an oblong shape, slash the top lengthwise with a sharp knife. Let raise until double, then bake at 375 for 15 minutes (until golden brown).

(To give the top a more golden sheen, brush dough with the following mixture before raising: 1/2 c. cold water & 1 tsp cornstarch, brought to boil in microwave.) Or simply rub some butter on tops of warm rolls after baking.



 
 
Dinner Rolls - Plain or Cinnamon!
2 cups scalded milk (that means zap it in the microwave for two minutes)
1 Tbs. salt                                                        3 Tbs. instant yeast
1/2 cup warm water                                        3 eggs
1 cube margarine                                             6 Tbs. sugar

Mix all the above ingredients together, then add approximately 8 cups of flour. The dough should be just barely past "sticky". (The dough should barely clean the sides of the bowl.)

Place "sticky" dough in a large bowl. Cover and place in warm kitchen to raise double. Punch down, and form into rolls. Let raise until double. Bake at 400 for 12 minutes or until golden brown.

Dough can be frozen on cookie sheet and used later! Simply pinch off golf ball-sized pieces of dough before raising and place close together on greased cookie sheet. Immediately place in freezer for 30-60 minutes. When frozen, place dough pieces in plastic bag, close and replace in freezer. When ready to bake, place on greased cookie sheet, with room to raise. Cover w/plastic (I spray mine so it doesn't stick to the raised rolls) and let raise in warm kitchen for 3 hours!



CINNAMON DINNER ROLLS:
1 Tbs. salt                                                        3 Tbs. instant yeast
1/2 cup warm water                                        3 eggs
1 cube margarine                                             6 Tbs. sugar

Mix all the above ingredients together, then add approximately 8 cups of flour. The dough should be just barely past "sticky". (The dough should barely clean the sides of the bowl.)
Place "sticky" dough in a large bowl. Cover and place in warm kitchen to raise double.  After raising in bowl, roll out dough on counter to approx. 1/4" thickness. Cut out with a large glass, or round cookie/biscuit cutter.

Melt one cube marg/butter in bowl
In a separate bowl mix 1 cup white sugar and 3 tsp cinnamon.

Dip each cut out roll in melted butter, then flop in sugar mixture, coating both sides. Place on greased cookie sheet, or other baking dish, and fold in half, poking the two sides together. Let raise until double, and bake at 400 for 12 minutes.




3 c. warm water,                                 2 Tbs yeast,
2 Tbs. honey or white sugar,               2 tsp salt, approx!
2 Tbs Malted milk (optional)              7 c. flour

Follow the recipe...don't bother adding the malted milk powder unless you happen to have some on hand... And don't add ALL of the flour listed at once!! Only add 6 cups at first, then gradually add more until the dough "cleans" the sides of the bowl. Don't add any more!!  Cook until golden brown, which turned out to be about 13 minutes...
